    BEYOND ANGRY I was beyond angry when I received this book. The suggestion from the Amazon description was that it gave instructions for fermenting a range of ingredients including pulses, which I was particularly interested in. Imagine my horror that whilst pulses have a whole chapter there are no instructions on how to ferment them (I refuse to accept that the dosa recipe is anything other than the standard). The miso recipes just use miso paste, despite the description very misleadingly suggesting that…
