Milk Kefir Grains can ferment Almond and Coconut Milk successfully.
This type of fermentation however, should be limited to 2 or 3 brews before reversing the feed back to mammal milk.
This is because the Kefir bacteria and yeasts thrive from the lactose and nutrients present in MAMMAL MILKs (Cow/Goat/Sheep).
Whilst Milk Kefir Grains can produce delicious Kefir drinks from almond and coconut milk,
long exposure to non mammal milk will eventually starve the cultures.

MAKING YOUR KEFIR

You will need:

Nylon Sieve/Strainer Plastic/Wooden Spoon Glass/Plastic jug Glass Bottles Breathable cover (Muslin cloth/ coffee filter paper) alternatively a loose fitting lid Hair Band Fresh Cows Milk (preferably whole milk)

COWS MILK

Our milk Kefir grains work best with organic whole cows milk. You can also use whole cows milk which we advise as it will be more cost effective for you and will still produce the highest quality kefir. If you want to produce homemade milk Kefir with semi-skimmed cows milk this would also be okay, although the kefir grains do not have the essential nutrients in semi-skimmed milk to stay alive. We advise after 2-3 batches of Kefir made with semi-skimmed milk you produce a batch with whole cows milk to feed the grains so they do not get damaged or die. We do not recommend you use skimmed milk as there are not enough essential nutrients for the grains to work.

GOATS MILK

Our grains are perfect to make milk kefir with organic whole goats milk. Just like cows milk we advise to use whole goats milk as it is more readily available than organic and is cheaper. You can use semi-skimmed goats milk but again we advise to only use this for 2-3 batches then using the whole milk to supply to grains with their essential nutrients to feed. We do not advise skimmed goats milk as there is again not enough nutrients for the grains to feed on and they may become damaged or die.

You will receive the stated quantity of healthy raw milk kefir grains, in a bag with some milk to provide nutrients whilst they are in the post. The grains are super active and will soon start multiplying. I use an airlock on the fermenting jar, so the whole process takes place in an anaerobic environment and to ensure the highest level of hygiene. Besides containing highly beneficial bacteria and yeasts, kefir is a rich source of many different vitamins, minerals and essential amino acids that promote healing and repair, as well as general health maintenance. Kefir contains high levels of thiamin, B12, calcium, folates and Vitamin K2. It is a good source of biotin, a B vitamin that helps the body assimilate other B vitamins. The complete proteins in kefir are already partially digested, and are therefore more easily utilized by the body. Like many other dairy products, kefir is a great source of minerals like calcium and magnesium, as well as phosphorus, which can help the body utilize carbohydrates, fats and proteins for cell growth, maintenance and energy. For the best results, drink the kefir before breakfast and again at night. Kefir is a live product, so the flavour can change per batch, because the milk, length of time and the conditions in the room where you ferment it will influence the flavour. Once you have received them, give them a quick rinse and then put them in a glass jar with a pint of milk – put the jar out of direct sunlight and leave the lid on loosely, as the fermentation will create gas. Normally, the ferment should be done after 24-36 hours, but the first few times it may take a bit longer.
